The base beer for the collab is the LAAW Lievre Saison, so I wanted to compliment the flavors that are natural to the farmhouse style. We settled on apricots to compliment the fruitiness of the yeast, and pink peppercorns, which hopefully will build on the spicy herbal characters of the hops, as well as give it a great peppery mouthfeel. Steve from the Glendale Tap came in and suggested that we add raspberries as well, which will definitely contribute some tartness and color to the beer. While putting it all together in the cask we tried not to be too heavy on any one of the ingredients – we wanted to create a nice balance, while still letting the base beer shine through. We’ll see how we did on August 28th!
